Gin San Mirror Finish Katsuo Knife Walnut Octagonal Tensoge Handle

This knife features a long, slender blade traditionally used for filleting larger fish such as bonito and tuna. Its shape allows for precise cuts into the fish, making it ideal for preparing fish dishes. In Kochi Prefecture, known for its bonito fishing and cuisine, this style of knife has been used for generations.

Crafted from Ginsan (Silver No. 3) stainless steel, it offers a sharp, lasting edge along with excellent resistance to rust and easy maintenance.

Each knife is hand-forged individually by skilled artisans, with every step—from forging to final polishing—completed entirely within our workshop. The blade is polished to a mirror finish, providing a smooth surface that ensures clean, precise cuts while preserving the texture of ingredients.

The handle is made from natural wood and shaped into an octagonal form, fitting comfortably in the hand and allowing for prolonged use with minimal fatigue.
